Happy FOOD FRIDAY! The holiday season is here! It is the first FOOD FRIDAY of December, can you believe it? One big thing about the holidays, is holiday cookies...sooo today we have a yummy treat for you, CHOCOLATE CHIP COOKIES! But these aren't just any chocolate chip cookies, these are waste-free, gluten free, and vegan! If you haven't already checked out our FOOD FIRDAY: ALMOND MILK, you need to because today we are going to be using that left over almond pulp to create WASTE-FREE ALMOND PULP CHOCOLATE CHIP COOKIES. Kind of mouth full to say but you will want your mouth full of these yummy cookies once you try them! These cookies are perfect for a holiday party, cookie baking, gifting, or even leaving some cookies out for Santa! (Almond pulp is similar to almond flour, so if you aren't going to be making any almond milk but still want to make these cookies, you can always replace the almond pulp for almond flour!) TIME: approx. 1 hour SERVES: makes about 10-15 cookies(depending on the size) INGREDIENTS:
-3 tbsp of plant milk(we used almond milk)
-1 cup of almond pulp
-1 cup of gluten free oat flour
-1/2 tsp of baking soda
-3/4 cup brown sugar
-1/2 cup of chocolate chips
-1 tbsp of flaxseed meal
-1/4 tsp of salt
-1/2 tsp of vanilla extract
-1/2 tsp of almond extract(OPTIONAL)
-1/3 cup coconut oil, melted and cooled STEPS:
Pre-heat the oven to 375F and prepare a cookie sheet with a re-useable nonstick liner or if you don't have that you can use parchment paper.
First, get a large bowl. Then pour in your brown sugar, vanilla extract, almond extract, flaxseed meal, and almond milk. Mix all those ingredients together until fully combined.
Then pour in your coconut oil to the mix and stir until the mixture is smooth-like in texture.
Next, add in your almond pulp, oat flour, baking soda, and salt. Stir those ingredients into the mixture until they are fully mixed in.
After that, you need to fold in the chocolate chips. You can either do this with a wooden spoon or just a larger spoon.
Once the chocolate chips are folded in, you can roll your dough into balls(each should be about 1 1/2 to 2 tbsp of dough) and place them on the lined cookie sheet.
When all of the cookies are on the cookie sheet, you can put them into the oven. They will bake for 12-15 minutes.
Once they are finished baking, let them cool for 20-30 minutes.
Then, ENJOY!
