FOOD FRIDAY: SUMMER STRAWBERRY MUFFINS (GLUTEN & DAIRY FREE OPTION)

Happy Friday! How has everyones week been? Hope it has been amazing! We are trying to soak up the last month of summer and we have a few more summer recipes to share with you all! Today's recipe is summer strawberry muffins! It is a perfect breakfast or even snack and it can easily be made gluten free and dairy free! SUMMER STRAWBERRY MUFFINS

MAKES: 1 dozen (12 muffins)

TIME: About 25 minutes

INGREDIENTS:

  • 1 cup of diced strawberries

  • 1 egg

  • 1 & 1/2 cup of all purpose flour (or gluten free as a replacement)

  • 2 tsp of baking powder

  • 3/4 cup cane or coconut sugar

  • 1/2 tsp of salt

  • 1/3 cup of olive oil

  • 1/3 cup of almond milk (or another plant milk)

STEPS:

  1. Pre-heat the oven to 400*F and place 12 muffin liners into a muffin tray.

  2. Combine dry ingredients: flour, sugar, baking powder, and salt in a large bowl. Leave 3 tbsp of the dry mix in a separate bowl for later.

  3. Then, add the oil, milk, and egg into the dry mix. Stir until fully combined. (If you are making it gluten free and mix is too thick, you can add an extra 2 tbsp of milk to fix this!)

  4. Next, take the 3 tbsp of dry mix you put aside, and cover your diced strawberries with it. (If this is not enough dry mix to cover all your berries, you can add more flour). This step will keep your berries from sinking to the bottom of your muffins!

  5. Now, fold your flour covered berries into your muffin mix.

  6. Next, pour your muffin mix into the muffin liners. Each muffin liner should have about 2 tbsp of muffin mix.

  7. OPTIONAL: For an extra crunch on top, you can sprinkle some sugar on top of your muffins before baking.

  8. Bake your muffins in the oven for 15-20 minutes. (Or when your toothpick comes out clean).

  9. Lastly, let cool and enjoy! (These muffins can be stored in your fridge for about 5 days)
