Happy FOOD FRIDAY! Valentine’s Day is just a few days away❤️! One tradition of valentine’s day is to make and share sweets with one another or your valentine. So, today we have a recipe for a sweet treat: POMEGRANATE LIME MACAROONS! You can give these to your valentine, gal-entines, or eat them all by yourself! This recipe is gluten free and dairy free but due to the egg whites in the cookies, it is not vegan. Macaroons are semi-difficult to make properly but they are worth the time and effort. SERVES: 40 macaroons
TIME: about 3 hours
INGREDIENTS:
Cookie part
-2 cups of powder sugar (sifted)
-1 cup almond flour (sifted)
-3 egg whites at room temperature
-pinch of salt
-1/4 cup granulated sugar
-1/2 tsp of vanilla extract
Frosting part
-1/2 cup of vegan butter (regular butter works too)
-the juice of one small pomegranate
-1 1/2 cup of powder sugar (sifted)
-1 1/2 tsp of lime juice
-1/2 tsp of vanilla extract
STEPS:
Cookie part
Beat your egg whites and salt at medium speed until they are white and frothy.
Add the granulated sugar and vanilla into the egg whites. Beat at medium until there are soft peaks in the mix.
Fold the powdered sugar and almond flour into the mix until it is smooth and rolls off of the spatula.
Let the batter sit for thirty minutes.
Line 3 baking sheets with parchment paper or another re-useable option.
Pipe the batter onto the sheets in even shaped circles.
Tap the pan on the counter to remove the air bubbles out.
Pre-heat the oven to 300F degrees and let the unbaked cookies sit for an hour to set.
Bake each sheet of cookies (one at a time), until they are golden brown (around 20 minutes).
Let them cool on a wire rack.
Frosting part
While the cookies are cooling, you can start making the frosting.
Beat the butter and powder sugar in an electric mixer.
Add in the lime juice, pomegranate juice, and vanilla extract. Beat until combined.
Assembly section
Match the similar sized cookies together.
Pipe on frosting on one cookie and then sandwich the other one on top of the frosted cookie.
Do step two to all the matching cookies.
