FOOD FRIDAY: PEACH & BERRY CHIA SEED PUDDING

Happy FOOD FRIDAY! It is the first food Friday of the summer! So exciting! Todays food Friday is a yummy breakfast treat, PEACH & BERRY CHIA SEED PUDDING! While chia seed pudding is a fairly new creation, chia seeds have been used around the world for ages. The use of chia seed started in the Mayan and Aztec cultures. Chia seeds are loaded with anti-oxidants, fiber, omega-3, and full of cleansing properties. And an added bonus to chia seed pudding is that it is naturally gluten free AND it can be easily made vegan! Chia seed pudding requires meal prep so we have separated the recipe into two parts, one for the day before and the other for the morning you eat it.


PEACH & BERRY CHIA SEED PUDDING

SERVES: 1

TIME: Part one (12 hrs or overnight), Part two (5-10 minutes)

INGREDIENTS

(part one)

  • 1/2 cup of almond milk (or another milk)

  • 2 tbsp of chia seeds

  • 2 tsp of maple syrup (or honey)

  • 1/2 tsp of vanilla extract

(part two)

  • half a peach

  • handful of rasberries

  • chopped almonds (or another crunchy item)

  • OPTIONAL: honey, mint leaves, edible flower, nuts, or more berries

STEPS (part one)

  1. Get a mason jar or a jar with a lid to seal it shut later.

  2. Add in all of the part one ingredients to the jar, close the lid, and shake the jar to mix it in.

  3. Place in the fridge overnight

(part two)

  1. Take your jar out of the fridge .

  2. OPTIONAL STEP: Pour your pudding into a blender and blend it up to remove some of the texture.

  3. Slice up half a peach and wash your raspberries.

  4. Add your peaches, raspberries, and sliced almond on top of your pudding.

  5. OPTIONAL STEP: drizzle honey and add any extra berries, fruit, mint, or nuts.

  6. Mix it up and enjoy it all!
