It's FOOD FRIDAY again! For those that are new, every Friday we posts a recipe here, on our blog. One of the five sections of BE era Magazine is BE kind, which is all about the natural side of life and being kind to the Earth. Eating is a natural thing we do everyday in order to live. It helps keep us alive which is why it's important to know natural, healthy recipes. Last week we did A GOOD LUCK GREEN DRINK which was a green juice that would calm the skin. Today's recipe is gluten-free and vegan juice pulp cookies. (This can be made into muffins as well, they are denser though). Juice pulp is that leftover pulp from your juicer. Most of the time, this part is thrown away but it can actually be turned into healthy treats that you can eat! Not only is this recipe good for the Earth since it uses all the left-over scraps, but it also is a healthier treat option for you.

JUICE PULP COOKIES/MUFFINS
TIME: 30-35 minutes
SERVES: 12 muffins or 16 cookies
Ingredients
-1 cup of juice pulp (you can use the leftover pulp from A GOOD LUCK GREEN DRINK)
-1 1/2 cup of gluten free flour
-3/4 cup of maple syrup
-1/4 cup of oil (we used avocado)
-4 tbsp of cashew butter (other nut butters work too)
-4 tbsp of ground flaxseed
-1 tsp of apple cider vinegar
-1/2 tsp of baking powder
-1/2 tsp of baking soda
-1/4 tsp salt
-1/4 cup of mini vegan chocolate chips
Steps
First, heat the oven to 375F degrees.
Next, blend your juice pulp up so it's not stringy.
Then, combine all the ingredients in a large bowl.
If you are making cookies, roll the dough into one inch cookie balls and press them down with a spoon. If you are making muffins, line a muffin tin and portion out the dough into the muffin tin.
Both will bake for about 20-25 minutes, depending on the size and thickness of the cookies or muffins.
Once baked, take out and allow them to fully cool.
Then, enjoy!
