FOOD FRIDAY: GLUTEN FREE(VEGAN OPTION) SNICKERDOODLE COOKIES

What is a better winter cookie than a the cinnamon cookie: SNICKERDOODLE. Snickerdoodle cookies are the perfect cookie to snuggle up by a fire and enjoy. They are similar to a sugar cookie but the main difference is the cream of tartar that is in a snickerdoodle cookie. Fun fact about snickerdoodle cookies: it has had many names including "cry babies" and "jumbles". This snickerdoodle cookie recipe is gluten free and there is a vegan option for those who need it! MAKES: 1 dozen

TIME: Approx. 30 mins


INGREDIENTS

-1 egg white (a flax egg works as well too)

-1/2 cup of oil (we used olive oil but you can use another oil like melted coconut)

-1/2 tsp vanilla extract

-3/4 cup of brown sugar

-1/4 cup of maple syrup

-1 1/4 cup of oat flour

-1 tsp of cinnamon

-1/2 tsp of cream of tartar

-1 tsp of baking soda

-a pinch of salt


STEPS

  1. Pre-heat oven to 350F and prepare a silicon cookie sheet (or liner if you don't have a silicon one).

  2. Then, in a mixing large bowl, mix together the maple syrup and 1/4 cup of brown sugar.

  3. Once that is fully mixed together, add in the vanilla, egg white, the rest of the brown sugar, and salt to the bowl and mix together fully.

  4. Then, in a separate bowl, combine the oat flour, baking soda, cream of tartar, and 1/2 tsp of cinnamon making sure there is no clumps.

  5. Next fold in a tbsp of the flour mixture. Once that is done, you can add in the oil.

  6. Once the oil has been mixed in, fold two tbsp at a time of the flour mixture, until all the flour mixture is folded in.

  7. Place the batter in the fridge for 20 minutes to let it chill.

  8. Once the 20 minutes is up, you can scoop 1 tbsp's of dough onto your lined cookie sheet about 3 inches apart. The cookies will spread pretty far out.

  9. Then place the cookies into the oven for 12 minutes.

  10. After the 12 minutes is up, take the cookies out and sprinkle extra cinnamon on top of the cookies.

  11. Lastly, let the cookies cool for 10 minutes and then ENJOY!
