FOOD FRIDAY: FRIDGE CLEAN OUT SOUP

Happy FOOD FRIDAY! We are halfway through the month of February. If you remember earlier this month, we mentioned how February comes from a latin root word that means, "to cleanse". So, today we will apply this to FOOD FRIDAY with a fridge clean out soup! We touched on how you can use leftovers to make a yummy soup around Thanksgiving, but this is a full fridge clean out. There is nothing worse than having food about to go bad and not knowing what to do with it or collecting leftovers that aren't being eaten. Not only is a messy fridge mind cluttering, but it is also wasteful. So, whether it is your dorm fridge, your home fridge, or your parents fridge that you want to clean out, this blog post will help you out! Since everyone's fridge contains different items, this will be a guided recipe rather than an exact recipe for you to follow.


TIME: 20 minutes


INGREDIENT IDEAS (depending on what is in your fridge, this will change but here are some ideas to get you thinking)

-Carrots

-celery

-leftover potatoes (any type)

-spinach

-leftover rice

-onions

-leftover beans or peas

-leftover meats, grilled, baked, or fried (if you aren't vegan)

-leftover tofu (seasoned, plain, or pan-fried)

-pasta (leftover or not)

-any veggie scraps you saved

-meat scraps (including bones)

-kale

-barley

-any leafy greens


NEEDED INGREDIENTS -a few veggies or leftovers

-optional seasonings: paprika, thyme, sage, salt, pepper, celery salt, or chili powder (if you use a broth you might not need these)

-two cups of water OR broth per person


STEPS

  1. Get one large pot to hold your water OR broth. If you choose to use the water, add in few of the optional seasonings from the needed ingredient list to match your liking. Then, pour your amount of water you choose (2 cups per person) into your pot.

  2. Place your pot into the stove top and turn the heat on medium-high.

  3. Once your water is heating up, you can start by putting in your uncooked ingredients. These might be the celery, carrots, leafy greens, or onions. Cut these up and pour them into the water. The uncooked veggies will need to be cooked longer than the cooked veggies.

  4. After 3-5 minutes of the uncooked veggies being cooked, you can add in the leftovers you picked out. This could be leftover potatoes, pasta, rice, beans, peas, ect... Let these heat up but make sure they don't overcook because they have already been cooked before this. (It should take around 2 minutes)

  5. Once all your ingredients are cooked, taste your soup and see if you feel like it needs any other seasonings like salt or some chilly for spice. If it does need something, add it in until you like the flavor.

  6. Then, enjoy your fridge clean out soup!

FOR STORAGE: You can keep this leftover soup good for up to a week in the fridge OR you can freeze part of it for up to 3 months and thaw it out when you want to eat it.
