FOOD FRIDAY: DRAGON FRUIT NOODLE BOWL

Hey there, it's FOOD FRIDAY! Try out this dragon fruit noodle bowl.

Ingredients needed for one serving

-2 tbsp of frozen dragon fruit puree

-1 oz of rice noodles

-6 cubes of extra firm tofu

-1/4 cup of chopped cabbage

-3 tbsp of cornstarch

-1 tbsp of soy sauce or soy sauce substitute

-1 tsp of coconut sugar (brown sugar works too)

-2 tsp of sesame seeds

-1 cup of water

-1 tbsp of sesame oil


Steps

  1. Add your water, noodles, and dragon fruit into a pot and boil until noodles are fully cooked (about 15 minutes)

  2. While the noodles are cooking, take the tofu cubes and cover them in cornstarch.

  3. Next, pour the sesame oil into a pan and heat place it on the stove on medium heat. Then take your tofu and pan fry them in the oil.

  4. While both the noodles and tofu are cooking, take the soy sauce, sugar, sesame seeds, and 2 tsp of corn starch and mix it together in a bowl.

  5. Once the tofu is done pour the sauce you made on top of it.

  6. Now that everything is prepared, take your bowl and place the noodles in then top it with the cabbage and tofu.

  7. Enjoy!
