FOOD FRIDAY: DECONSTRUCTED POTSTICKERS

Happy FOOD FRIDAY. For those that do not already know, Chinese New Year is in four days. Whether you celebrate it or not, we have a fun meal that you can make this weekend or for the holiday next week! During Chinese New Year there are certain foods that are tradition to eat and are said to bring good luck and fortune for the upcoming year. One of these foods is dumplings or potstickers! So, for today's recipe we have decided to do a twist on the traditional potstickers and make deconstructed potstickers. One great thing about these deconstructed potstickers are they are a lot easier to make than a traditional potsticker because there is no assembly required but they taste just as good as a traditional potsticker. These deconstructed potstickers are not only the perfect meal, they also are gluten free and they are vegan! DECONSTRUCTED POTSTICKERS

TIME: 1 hour 30 minutes

SERVES: four people


INGREDIENTS

"Wrappers" -1 cup of fine rice flour

-2/3 cup of tapioca flour

-2 tbsp of cornstarch

-1/2 tsp of salt

-2/3 cup of hot water

-2 tsp of oil


"Filling"

-1 cup of chopped cabbage

-1 1/2 cup of chopped carrots

-half block of tofu

-3 cloves of minced garlic

-2 tsp of minced ginger

-1 tbsp of liquid aminos (or soy sauce)

-1/2 tbsp of sesame oil


STEPS:

1. This process has a few steps and processes happening at the same time so, first you need to make the "wrappers".

  1. Mix all of the "wrappers" dry ingredients in a large mixing bowl.

  2. Next, mix in the oil.

  3. Then, bit by bit, mix in the hot water to the dry ingredients. (Stop if as you mix the dough seems to become extra watery).

  4. Once the dough has cooled down, knead it for around 2 minutes, until it is smooth.

  5. After kneading, wrap your dough in plastic film (or another environmentally friendly cover), and place it in the fridge for 30 minutes.

2. While the dough is chilling in the fridge, you can begin prepping the "filling"

  1. Make sure all your veggies are chopped into fine pieces.

  2. Then, take your tofu out and crush it into tiny pieces until it looks similar to ground up meat.

  3. Once everything is chopped and grounded up, you can add all of the "filling" ingredients into a large bowl.

  4. Mix the ingredients until everything equally distributed and fully combined.

  5. Then, you can let it sit in the fridge while you finish the "wrappers".

3. While the "filling" is in the fridge, get out your "wrapper" dough after 30 minutes to finish them.

  1. Take the dough out of the fridge and sprinkle some cornstarch on a countertop.

  2. Then take off the dough cover and chop the dough into four even pieces. Keep one piece uncovered and recover the other three with the cover you used in the fridge.

  3. With the piece you kept out, roll it into a cylinder and cut the cylinder into 6 even sections.

  4. With each section, roll it into a ball, then press it down until it is a flat circle.

  5. Then, turn on a stove at low and add 2 tsp sesame oil to a pan. You will be pan fry the dough circles you made.

  6. Once the pan is hot enough, add in the first six dough circles to pan fry them. Once each side has been cooked, you can take them out of the pan and place them on a plate for later.

  7. Repeat steps 3-6 with each piece that was under the cover.

4. Lastly, after all the "wrappers" are cooked, you need to cook the filling.

  1. Take it out of the fridge and pour the contents into the pan you cooked the "wrappers" in.

  2. Put the stove on medium and use a spatula to mix the "filling" around so everything is evenly cooked.

  3. Once it is all cooked (should take around 5-10 minutes since tofu technically doesn't need to be cooked), you can turn the stove off and grab a plate and add some "filling" and a few "wrappers". Then, use the wrappers as an edible spoon to enjoy your deconstructed potstickers!
