Happy FOOD FRIDAY! Todays recipe for you is a yummy treat with a healthy twist, chickpea cookie dough! You might have seen dessert hummus before and this is pretty similar to that. You can either eat it like cookie dough with spoon or pair with green apples and have it as hummus. It is the perfect vegan/gluten free snack or even dessert! COOKIE DOUGH HUMMUS
TIME: 5-10 minutes
SERVES: 3-4 people
INGREDIENTS:
-one can of chickpeas (or garbanzo beans)
-3 tbsp of almond butter or cashew butter
-1/4 cup of maple syrup
-about a 1/4 cup of chocolate chips
-OPTIONAL: a dash of vanilla extract
STEPS:
Drain the can of chickpeas and dry the beans off as much as you can. (The excess water makes it less dough like.)
Add your drained chickpeas, almond butter, maple syrup, and (optional) vanilla extract to a blender. Blend these together until there are little to no chunks of chickpeas.
Once fully blended, move the cookie dough into a bowl and fold in the chocolate chips. (Like you would when you make chocolate chip cookies)
Then, grab a spoon or cut up an apple and ENJOY your homemade chickpea cookie dough!
