Hey everyone, guess what day of the week it is? It's FOOD FRIDAY, one of our personal favorite days of the week! Today's recipe for ya'll is an apple pie crumble. This yummy fall crumble can be eaten as a dessert, a snack, or even as a sweet treat for breakfast. You could add ice cream, top some oatmeal, or just eat it by itself. It is gluten free and has a vegan option as well. Keep scrolling for the recipe.
SERVES: 8 people
TIME: approx. 2 hours
INGREDIENTS OUTER LAYER
-1 cup of finely chopped pecans
-1 cup of almond flour
-2 tbsp of butter (vegan butter works as well)
-3 tbsp of maple syrup
-1/2 tsp of vanilla extract
-1/2 tsp of almond extract
FILLING
-6 or 7 peeled apples, chopped into cubes
-1/2 cup of brown sugar
-1 tbsp of apple pie seasoning
-1 tsp of cinnamon
-1 tsp of nutmeg
-1/2 tsp of cardamom
STEPS
MAKE YOUR OUTER LAYER
Pre-heat oven to 350F
Add the pecans and almonds to a large bowl.
Add the butter to the bowl and mix it in (until it is semi-sticking together)
Pour in the maple syrup, vanilla extract, and almond extract. (NOTE:if you are not vegan and want this to come out more "pie" like rather than a crumble, then you can replace the maple syrup for 2 eggs)
Mix all together until it is sticky-like
Then get a pie container, or another pan that is around the size of a regular pie.
Take the mixture and place it along the edges of the pan or container.
Cook in the oven for 20 mins (until it turns a golden brown)
MAKE THE FILLING
Add your apples, brown sugar, cinnamon, nutmeg, apple pie seasoning, and cardamom to a large bowl
Mix until all the apple pieces have "seasoning" on them
Pour the filling into the COOKED outer layer
Put the whole thing in the oven and let bake for about 1 hour.
Let cool down a bit but not until it's cold because this tastes AMAZING warm!
